In 1960, Galloni was established in the province of Parma by five brothers who had prior knowledge and experience in the art of making top quality ham, also known as prosciutto.They chose to aim for superior quality right from the onset, by applying a production process that would have the right balance of modern technology and traditional procedures: from the selection of the raw materials, to processing and curing. Each production phase is checked and carried out by qualified and experienced staff. For this reason, each Fratelli Galloni operator only deals with a limited number of hams. Normally, a standardised and fully automated production system would allow a five-fold increase in volume, but the care and attention would necessarily be very much inferior. Fratelli Galloni is still run by two members of the same family, who preserves the wealth of knowledge handed down to them keeping a long family tradition alive.
